Gluten Free Apple Pie Bacon Cheddar Crisp

We love BBQ’s, family get-together’s well, any excuse to get together and cook food is a good time in our book. As our family and friends list continues to grow, there are more requests or needs for special diets. Especially gluten free; sometimes gluten free just comes naturally and there’s nothing special that needs to be done like with ribs, sausages, salads or veggies. Cakes, brownies, cookies and pies all use flour which is a gluten no-no.

Pig of the Month has the perfect solution, for a gluten free dessert that is so good no one will even know it’s a “special” dessert. Adding crisp fried Pig of the Month Apple Pie Bacon and using sharp cheddar cheese to top the cinnamon-y baked goodness of the apples, is our delicious rendition to the classic apple pie.

Instructions:

Preheat oven 350°F. Lightly butter a pie pan. In a large bowl toss together the apples, arrowroot powder or cornstarch, sugar, cinnamon and pinch of salt.  Place in prepared pie pan, cover with foil and bake on middle rack.

Bake for 30 to 40 minutes or until apples are tender. Remove foil and sprinkle bacon and cheese on top, bake for another 5 minutes or until cheese has melted. Let cool a few minutes before serving.
