BBQ Chicken & Bacon Guacamole Wraps are here to make all your secret lunch dreams come true... I don't know about you all, but I get SO bored with eating salad and turkey club sandwiches for lunch every day. I can get into a serious rut when it comes to lunch. With all the work piling up, I never have time to really think about what I am eating unless I plan it out ahead of time.

Planning ahead is not necessarily my strong suit. As much as I would love to craft a gorgeous lunch every day, I need something that's ready to just dive into on the spot when my stomach starts rumbling. That's why this wrap is SO perfect. Weeknight meals can get really boring, am I right? I mean, there's only so many times you can cook a plain ol' chicken breast, match it up with some veggies and not get bored to tears. Sometimes you need to shake things up during the week, but you don't have time to master an insane recipe. Enter Bacon-Wrapped Caprese Stuffed Chicken.

Bacon-Wrapped Caprese Stuffed Chicken | Sauce + Style

These chicken breasts are going to seriously wow your family and I bet you already have most of these ingredients in your home (or even growing in your backyard for you herb and veggie growers out there!). All you have to do is stuff your chicken breasts with those classic caprese salad ingredients, wrap them in bacon and boom. Dinner is done in less than 30 minutes and your satisfying everyone at the table. I LOVE caprese salads - the mozzarella, the tomato, the basil - it all screams freshness and summer to me with every bite. Chicken lends itself so well to this combo so it only makes sense to stuff everything INSIDE the chicken breast. That combined with the bacon-wrapped exterior leaves you with one of the moistest pieces of chicken you'll ever dig into.

The One Trick to Microwave Perfect Bacon

The One Trick to Microwave Perfect Bacon

How to Microwave Bacon | Sauce + Style

We've all been there in a pinch. The oven is taken, you've got 5 things working on the stove and you still need to cook up some bacon. This is the moment that knowing the one trick to microwave perfect bacon really comes in handy! There may be some naysayers out there that don't believe that microwaving bacon really works. Well, we're here to prove you wrong. If you do it right, you'll get that oh-so crispy, swoon-worthy bacon every time.

How to Microwave Bacon | Sauce + Style

So what's the one trick you need to know? It's simple - paper towels. You might be scratching your head right about now - I mean, we don't blame you. What's so special about paper towels? We swear, paper towels really are the key here. They soak up all that extra grease as the bacon cooks in the microwave so you end up with bacon that is anything but soggy. No globs of gross, pathetic bacon here. We respect our bacon WAY too much to let that happen on our watch. Are you ready to know the secret of the paper towel power when it comes to microwaving bacon?

How to Microwave Bacon | Sauce + Style

Here's how to do it right, every single time: Step 1: Line a baking dish (one that'll fit in your microwave, of course) with not one, not two, but THREE layers of papers towels. Step 2: Add bacon in a single layer and cover with another two layers of paper towels. Step 3: Microwave the bacon for 1 minute per slice of bacon. Check on it and cook in 30-second additional increments as needed. The price time will depend on the thickness of the cut and how much you are cooking at one time. Step 4: Once cooked through, transfer the bacon to a clean plate (NOT lined with paper towels) so the bacon slices don't stick to the paper towels as it crisps up. Step 5: Enjoy deliciously cooked bacon, right from your microwave! Did we just blow your mind?
