Lemon Meringue Mason Jar Pies
We are closing out our mason jar dessert celebration with the ultimate classic lemon meringue pie, just in time for summer.
Lemon meringue mason jar pies are sweet, tart and incredibly simple to pull together for your summer celebrations and barbecues. With a crust, filling and topping that come together in minutes, you are only 20 minutes away from a fresh, fruity dessert that no one will be able to resist.
Plus the meringue topping looks so delicious! The perfectly browned tips will make every mini mason jar pie look like a work of art. It’s a surefire way to impress anyone, from a first date to a large holiday barbecue gathering.
Preheat oven to 350 degrees.
"Pie Crust": In a medium bowl, stir together graham cracker crumbs, sugar and melted butter. Divide evenly between mason jars and pat down firmly to form the crust.
Lemon filling: Whisk together milk, egg yolks, lemon juice and zest. Pour the mixture evenly between the mason jars.
Meringue topping: Beat egg whites with cream of tartar for approximately 1 minutes, until it is frothy. Add in sugar and continue to beat until the mixture reaches stiff peaks, approximately 2 to 3 minutes. Spoon the meringue over the top of each mason jar. To create those cute little peaks, simply use the edge of a spoon to pull up little peaks all over the top.
Bake for 10 to 12 minutes until tips are golden brown and center is cooked all the way through. Refrigerate 1 hour before serving.
