INSTRUCTIONS:

Preheat oven to 350 degrees.

"Pie Crust":  In a medium bowl, stir together graham cracker crumbs, sugar and melted butter. Divide evenly between mason jars and pat down firmly to form the crust.

Lemon filling: Whisk together milk, egg yolks, lemon juice and zest. Pour the mixture evenly between the mason jars.

Meringue topping: Beat egg whites with cream of tartar for approximately 1 minutes, until it is frothy. Add in sugar and continue to beat until the mixture reaches stiff peaks, approximately 2 to 3 minutes. Spoon the meringue over the top of each mason jar. To create those cute little peaks, simply use the edge of a spoon to pull up little peaks all over the top.

Bake for 10 to 12 minutes until tips are golden brown and center is cooked all the way through. Refrigerate 1 hour before serving.
