THE PORK CHOPS ARE SUPERB, YOU CAN BAKE, PAN FRY OR GRILL. SO TENDER, YOU CAN CUT THEM WITH A FORK. I CANNOT SAY ENOUGH ABOUT THESE CHOPS.

Wonderful chops!

These pork chops are perfect - just the right amount of meat/fat/bone. Fat adds juiciness and bone also complements flavor. They are perfect for grilling, braising, frying, broiling and are good with simple seasonings or sauces you may enjoy. I like to make Maple Mustard Bourbon Chops: pan sear chops all surfaces in bacon drippings or oil of choice, then remove and add a dollop of butter and minced shallot and garlic until golden. Then sprinkle with flour to make a roux. Splash with bourbon and let liquid mostly evaporate, then add chicken stock and a slurry mixed ahead of time consisting of Dijon mustard, maple syrup, tamari, and Worcestershire sauce. Add your choice of herbs (I like marjoram and thyme). Add chops back into sauce and cover with lid. Flip chops at least once while simmering (sauce does not have to cover chops). Add stock if needed so sauce will not be too thick. A dribble of boiled cider is a nice addition. I don't measure - adjust all ingredients according to your preferences. Check temperature with instant read thermometer. Between 140 and 160 degrees F is fine.
