  • This is a finely ground sausage that is slightly more polished, but don't let that fool you.

    We hand stuff natural casings with a blend of pasture raised Peking duck, pork, organic dried pears, and port wine for a sausage that is slightly sweet and bursting with flavor.

    Perfect sliced into pasta, cut into rounds and put onto crackers with a dab of cracked mustard, or just put in between a bun with a nice glass of red.
